Koichiro Yamakawa studied sake brewing
at Hiroshima University,
specialing in fermentation engineering.
Then he worked for 9 years at the brewing laboratory
of the National Tax Administration Agency as a sake expert.
In the end, he joined UMENISHIKI company.
He believes the purpose of his sake company is to provide
a high quality sake which brings pleasure to its drinker.
